As one of the only independent cake decorators in the Capital District Wedding Association, I have had the opportunity to work with many area professionals and in most every hotel/catering establishment.

The icing on this cake was an Espresso flavored Italian Buttercream Meringue with an orchid accent design. All of the roses, freesia, orchids, grapes and leaves that adorn the cake were made of gumpaste.

Cake Flavors: Two different flavors in the bride's cake are encouraged. Wedding cakes are $3.75 per slice with buttercream icing and are $4.75 per slice with rolled fondant. Our most popular flavors include:

Cake Designs: Brides usually either have a picture in hand of the cake she wants or wants to custom design her own cake by looking at assorted cake books and magazines. No additional charge is incurred for exterior design work, unless it requires royal icing flowers, gum paste flowers, or fresh fruit.

Cake Slices: There is no uniform standard in the cake business on what a cake slice should be or is. My research in the capital district area tells me however, that a bakery will sell a cake that they estimate serves 100, but in my calculations would only serve 65. Our cake slices are 1" x 2" or 35% larger than the bakery’s estimation, which may become quite critical depending on the expertise of your cake cutters.

Working on a tight budget? Some brides prefer a smaller display cake with sheet cakes in the back of the house to serve a larger reception of 150 or more.

Deposit/Cake Contracts: Your date becomes reserved only when the cake contract is drawn up, signed and 50% deposit is made. Final deposits are due 2 weeks prior to the wedding date.

A note for the out of town bride to be: Many of my customers are out of town. If it’s impossible to set up a time to meet before the wedding, cake samples can be shipped to you for tasting on your Fed-Ex account. Email becomes the bulk of our long distance conversations, with pictures and thoughts shared in that format. References are available on request.
